There can be a dispute between my sisters and I what the name of this goodness is, but I call it Peanut Butter Caramel Popcorn. It is so good, but I don't make it often because I can easily make myself sick on it. Plus, when I make it a huge batch, it disappears quickly...
Today, it came up in topic at Grandma's, so - WHY NOT? - I made a triple batch.
And, I think everyone approved.
Recipe:
1/2 cup sugar
1/2 cup corn syrup
Bring to a rolling boil. Remove from heat and add the following:
1/2 tsp vanilla
1/2 cup peanut butter
Mix until creamy and then drizzle over plain (non salted, non buttered) popcorn. Mom has an air-popper, so I use that to pop my popcorn.
DISCLAIMER: After some thoughts today, I am working on a tweak to the recipe, stay tuned....but, this recipe is awesome! I have been making it for 30 years and my Mom has been making it longer.
